Curry is a great complement to the delicate flavor of cashews.
Ingredients
- 1 (14 1/2-ounce) package whole wheat pasta of your choice
 - 1/4 cup cider vinegar
 - 1/4 cup olive oil
 - 2 tablespoons honey
 - 1 teaspoon cayenne
 - 1 teaspoon ground coriander
 - 1 teaspoon ground cumin
 - 1 teaspoon curry powder
 - 1 teaspoon ground turmeric
 - 1 clove garlic
 - 1/2 teaspoon sea salt
 - 1/4 teaspoon pepper
 - 1 cup chopped cauliflower, blanched
 - 1/2 cup roasted cashews
 - 1/2 cup sliced red onion
 - 1 carrot, julienned
 - 1/4 cup chopped red bell pepper
 - 1 green onion, chopped
 - 1/4 cup sliced black olives
 
Directions
- Cook the pasta according to package directions in a soup pot until it is al dente.
Drain and return the pasta to the pot. - Pour the vinegar, oil, honey, cayenne, coriander, cumin, curry, turmeric, garlic, salt, and pepper in a blender. Process on high speed until creamy. Transfer it to the pot with the pasta. Mix well. Bring to a boil on high heat. Immediately decrease the heat to low. Add the cauliflower, cashews, red onion, carrot, bell pepper, green onion, and olives. Mix well. Simmer for 15 minutes.
