Curry-Cashew Pasta

Curry-Cashew PastaCurry is a great complement to the delicate flavor of cashews.

Ingredients

  • 1 (14 1/2-ounce) package whole wheat pasta of your choice
  • 1/4 cup cider vinegar
  • 1/4 cup olive oil
  • 2 tablespoons honey
  • 1 teaspoon cayenne
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon curry powder
  • 1 teaspoon ground turmeric
  • 1 clove garlic
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon pepper
  • 1 cup chopped cauliflower, blanched
  • 1/2 cup roasted cashews
  • 1/2 cup sliced red onion
  • 1 carrot, julienned
  • 1/4 cup chopped red bell pepper
  • 1 green onion, chopped
  • 1/4 cup sliced black olives

Directions

  • Cook the pasta according to package directions in a soup pot until it is al dente.
    Drain and return the pasta to the pot.
  • Pour the vinegar, oil, honey, cayenne, coriander, cumin, curry, turmeric, garlic, salt, and pepper in a blender. Process on high speed until creamy. Transfer it to the pot with the pasta. Mix well. Bring to a boil on high heat. Immediately decrease the heat to low. Add the cauliflower, cashews, red onion, carrot, bell pepper, green onion, and olives. Mix well. Simmer for 15 minutes.
