Rejuvenate, Replenish and Restore with Rejuvelac!

Rejuvelac is the “Gatorade” of the health world. Beyond giving you instant energy, Rejuvelac is good for stress and helps clean the intestinal tract by loosening mucus. A fermented liquid, Rejuvelac contains B vitamins, enzymes, and is a great source of protein. It also contains a nondairy beneficial bacteria lactobacillus (found in Greek yogurt). Rejuvelac should last in your fridge for about two weeks. It will never ‘go bad’, but will continue to ferment.

Ingredients

  • 3/4 cups sprouted wheatberries
  • 2 quarts purified water, plus more to blend the wheatberries

Directions

  • Day 1: Put the wheatberries in a blender. Add enough water to cover the berries by 2 inches. Process for 20 seconds or until the wheatberries are ground but still have some texture. (Hint: they should be grainy but not a fine powder.) Transfer the mixture to a large bowl. Add the remaining 2 quarts of water. Cover the bowl with a piece of cheesecloth or paper towel. Let stand overnight at room temperature.
  • Day 2: Stir the mixture with a spoon for 5 to 10 seconds. Cover. Let stand overnight at room temperatures.
  • Day 3: Stir the mixture with a spoon for 5 to 10 seconds. Cover. Let stand overnight at room temperature.
  • Day 4: Strain the mixture into glass jars. Store in covered containers, preferably glass to preserve freshness.

Yield: 2 quarts

Tip: If you don’t drink all the Rejuvelac before it spoils, it’s great for watering plants!
