Rejuvelac is the “Gatorade” of the health world. Beyond giving you instant energy, Rejuvelac is good for stress and helps clean the intestinal tract by loosening mucus. A fermented liquid, Rejuvelac contains B vitamins, enzymes, and is a great source of protein. It also contains a nondairy beneficial bacteria lactobacillus (found in Greek yogurt). Rejuvelac should last in your fridge for about two weeks. It will never ‘go bad’, but will continue to ferment.
Ingredients
- 3/4 cups sprouted wheatberries
- 2 quarts purified water, plus more to blend the wheatberries
Directions
- Day 1: Put the wheatberries in a blender. Add enough water to cover the berries by 2 inches. Process for 20 seconds or until the wheatberries are ground but still have some texture. (Hint: they should be grainy but not a fine powder.) Transfer the mixture to a large bowl. Add the remaining 2 quarts of water. Cover the bowl with a piece of cheesecloth or paper towel. Let stand overnight at room temperature.
- Day 2: Stir the mixture with a spoon for 5 to 10 seconds. Cover. Let stand overnight at room temperatures.
- Day 3: Stir the mixture with a spoon for 5 to 10 seconds. Cover. Let stand overnight at room temperature.
- Day 4: Strain the mixture into glass jars. Store in covered containers, preferably glass to preserve freshness.
Yield: 2 quarts
Tip: If you don’t drink all the Rejuvelac before it spoils, it’s great for watering plants!
